Made in Japan the Yaxell Super Gou Ypsilon 16.5cm Santoku Knife is extremely hard and sharp with an SG2 powdered stainless steel core with multiple layers of stainless steel and a hardness of 63 on the Rockwell scale. Features a canvas-micarta handle which is durable and water-resistant and a Damascus pattern on the blade.Key Features:
