Each knife blade in the Zen collection features a stunning hammer finish with 37 layers of forged stainless steel, which also serves to create small pockets of air, preventing food from sticking to the blade. Similar to a chef's knife, the versatile Yaxell Zen Santoku Knife 12.5cm has a shorter blade for greater control when mincing and chopping herbs, vegetables and fruit as well as fish and meat.Key Features:

- Blade has a VG10 super stainless steel core, which is covered by 18 layers of soft and hard high-carbon stainless steel on each side, producing the unique and rust resistant 37-layer Damascus blade.

- Yaxell blades are heated in a very hot kiln then tempered in high temperature, a heat treatment technique which makes the blades strong and durable with a hardness rating of 61 degrees on the Rockwell scale.
